I am NOT a chili fan, but . . . I LOVE THIS CHILI!!! I decided to try it because I had just cooked up a pound of black beans. This was a fantastic choice. It's hearty, yet not too spicy. Plus, black beans always give a nice rich flavor. Not to mention, between the meat and the beans, you have quite a nice protein and carb combo.
INGREDIENTS
1 tablespoon vegetable oil (I used olive oil)
1 onion, diced
2 cloves garlic, minced
1 pound ground turkey (i used lean ground beef)
3 (15 ounce) cans black beans, undrained
1 (14.5 ounce) can crushed tomatoes
1 1/2 tablespoons chili powder
1 tablespoon dried oregano
1 tablespoon dried basil leaves
1 tablespoon red wine vinegar

DIRECTIONS
Heat the oil in a large heavy pot over medium heat; cook onion and garlic until onions are translucent. Add turkey and cook, stirring, until meat is brown. Stir in beans, tomatoes, chili powder, oregano, basil and vinegar. Reduce heat to low, cover and simmer 60 minutes or more, until flavors are well blended.
